Vegan Walnut Chocolate Chunk Cookies

I used to make these cookies at work all the time. Except we made them several times the size of the ones I make at home. A good basic vegan cookie recipe.. and it’s chocolate! So that’s pretty cool too!

Adapted from Veganomicon:
Preheat oven to 350F – Bake for 10 minutes
Sift these ingredients together:

  • 2 c flour
  • 2/3 c cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Mix these together:

  • 2/3 c coconut oil, melted
  • 1 1/2 c sugar
  • 4 tsp ground flax
  • 1/2 c milk of choice
  • 2 tsp vanilla
  • 1/2 tsp almond extract

Fold the dry ingredients into the wet ingredients then fold in the items below or get creative with your add-ins. I put (vegan) marshmallows on my cookies last time (pictured) and it turned out quite delicious:

  • 3/4 c chocolate chips
  • 3/4 c walnuts
