I was craving pudding one day (after continuously writing notes on my patients who receive Ensure Pudding) and luckily for me pudding is super easy to make! I found this recipe and it’s actually looking really good to make more for tonight…
½ c sugar
⅓ c unsweetened cocoa powder
¼ c cornstarch
⅛ tsp salt
2 c unsweetened almond milk
1 tsp vanilla extract
I really did nothing to make this recipe healthier. My only changes were slightly less sugar and I used cashew/almond milk because that’s what we had. So good!
And yes, I do eat out of ramekins frequently as you can see above and on my Instagram. No shame.
