Rice Krispie treats are one of my favorite desserts. There’s something about the chewiness and the crunch that I really enjoy. And they’re so easy to make at home! Plus, no butter necessary when you sub coconut oil. Another bonus is that vegan marshmallows are pretty easy to find as well!
Ingredients:
– 1/4 cup coconut oil
– 1 10 oz bag marshmallows (Trader Joe’s are vegan)
– 5 cups crispy rice cereal (the puffed ones I used here will make it less crunchy)Optional add-ins include, but certainly not limited to:
– Chocolate Chips
– Cacao Nibs
– Shredded Coconut
– Chopped Nuts
– Sprinkles
– Freeze Dried Fruits
Mix together the oil and marshmallows over medium heat in a large pot. It will start to get gooey pretty fast. Make sure you stir it continuously with a silicon or wooden spatula to ensure the mixture doesn’t burn.
Stir in the rice cereal then transfer to a baking dish lined with parchment paper to let set. Sprinkle in any add-ins at this time. I chose to drop in chocolate chips over half of the mixture.
Let them sit for a bit, then cut and enjoy!
