Okay, maybe the title is a slight exaggeration. The easiest waffles are the ones you get from a restaurant. No preparation or clean-up involved! Second easiest is a frozen waffle. These are the third easiest waffles, but I’m not going to change the title!

I asked for a crockpot for Christmas one year so I could make yogurt. Note, I didn’t ask for a yogurt maker. I opted instead for a giant clunky device that is not ideal for making yogurt. So I have a crockpot and I mostly forget it’s in my kitchen and it doesn’t get used too often. Every so often, as in the other day, I decide to use it. I found this recipe for a slow cooker pumpkin chickpea and lentil curry.
It’s not even zucchini season (last summer I had more zucchini than I knew what to do with!) but I had some zucchini that needed to be used up, plus I had 2 ripe bananas. So my google search led me to this recipe.
